Creamy Baked Shrimp and Spinach Casserole


 

Ingredients:


1 lb (450g) shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 (10 oz) package fresh spinach

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

1/2 teaspoon paprika

1 tablespoon fresh parsley, chopped (for garnish)


Instructions:


Preheat Oven:

Preheat your oven to 375°F (190°C).

Prepare the Shrimp:

In a skillet, heat the olive oil over medium heat.

Add the shrimp and cook until they turn pink, about 2-3 minutes per side.

Remove the shrimp from the skillet and set aside.

Cook the Spinach:

In the same skillet, add the minced garlic and chopped onion.

Sauté until the onion becomes translucent.

Add the fresh spinach and cook until wilted, about 3-4 minutes.

Remove from heat and set aside.

Prepare the Cream Sauce:

In a medium saucepan, heat the heavy cream over medium heat.

Stir in the mozzarella cheese and Parmesan cheese until melted and smooth.

Season with salt, black pepper, and paprika.

Remove from heat.

Assemble the Casserole:

In a baking dish, spread the cooked spinach and onion mixture evenly on the bottom.

Arrange the cooked shrimp on top of the spinach.

Pour the cream sauce over the shrimp and spinach, spreading it evenly.

Bake the Casserole:

Bake in the preheated oven for 15-20 minutes, or until the top is bubbly and golden brown.

Garnish and Serve:

Garnish with chopped fresh parsley.

Serve hot with your favorite side dish.
