Forest Cake the perfect dessert for the holidays.

How pretty our cities are during the winter festive season, when everything sparkles and shines! And, of course, our festive menu has to match the mood. Here’s how we’ve prepared an enchanting Winter Forest cake.

To make a beautiful and delicious Winter Forest sponge cake, we need:

For the batter:

5 eggs.
2 tablespoons vanilla flavouring
375g flour
250g sugar
8 g of baking powder
225 ml vegetable oil
125 ml water
food colouring (green and red)


For the cream:

200g marzipan
500g cottage cheese
For decoration:

melted white chocolate
food colouring (green)
chocolate straws
sugar beads


To prepare:

1.) Divide all 5 eggs into yolks and whites and beat the whites with a mixer. Add the sugar and flavouring to the egg yolks and mix well. Next add the vegetable oil, water, flour and baking powder. Carefully add the whites and mix everything into a smooth dough.

2.) Divide the dough into 2 portions and colour in red and green.

3.) Preheat the oven to 180°C (top and bottom heat) and oil a round baking tin (26 cm in diameter). Lightly sprinkle the mould with flour and place the dough in it as the video shows: pour a small portion of red dough, then a portion of green dough into the centre. Alternate until the dough runs out.

4.) Bake the dough for 60 minutes and leave to cool. For the cream, mix the marzipan and cottage cheese together with a mixer. Cut the cake into 2 layers and spread a thick layer of cream.

5.) Then cover the cake with the cream on all sides.

6.) For the decoration, melt the chocolate in a water bath and dye it green (it is better to divide it into light and dark green). Place the chocolate in a piping bag. To make it easier for yourself, you can pre-draw shapes on the sheet that look like small trees. Cover the design with oiled baking paper and use a piping bag to draw the Christmas trees out of the cream. Make the trunk out of straws and decorate our Christmas trees with beads. When the cream has set, you can take the decoration off the paper.

7.) Stick the herringbones into the cake and you have a fancy festive dessert.
