In order to please your family and friends with delicious and beautiful cakes “Rainbow”, you need to have: butter, room temperature – 300 grams, in addition it is still needed to grease the forms; wheat flour, the highest type – 2 cups; almond paste – 250 grams; sugar – 1 cup; in 4 large eggs you need to separate the whites from the yolks; half a teaspoon of salt fine; gel ( preferably ) food coloring red and green; apricot jam – 450 grams; chopped bitter chocolate – 450 grams.
It is necessary to prepare three trays of rectangular shape, 23 x 30 centimeters, on the bottom of which to lay parchment paper, which to grease with butter and sprinkle with a little flour. Preheat the oven to 180 degrees.
Next, prepare the biscuit dough: almond paste, three quarters of a cup and 2 tablespoons of sugar, using a mixer with a spatula-shaped attachment, is mixed until fine crumbs are formed. One third of the egg mixture is kneaded into the dough, and then the remaining egg mixture is gently added. The dough turns out light and airy, it must be poured into three bowls and mixed with dyes, but one dough remains colorless.
The batter is poured onto the prepared baking trays, be sure to spread evenly over all surfaces and bake the biscuits, for about 10 minutes. The baked cakes are cooled.
Next you need to assemble the cakes, distributing the jam evenly on the cakes and place them in the refrigerator for 4 hours. After that, the cakes are poured with melted chocolate.
