To make strawberry fudge, melt white chocolate in the microwave. When the chocolate has melted, mix it with the strawberry fondant. If you want to make strawberry fondant into funny shapes, put it into moulds.
1 cup strawberries
½ cup coconut cream (heavy cream or can of coconut milk)
¼ cup tahini or almond paste
2 tablespoons maple syrup, or other sweetener
½ teaspoon vanilla extract, or vanillin to taste
¼ cup melted dark chocolate (for decoration)
Line a small 20cm x 20cm pan with parchment paper. Place the strawberries, coconut cream, tahini, syrup and vanilla in the blender. Blend until smooth, sweeten to taste and pour into the bowl.
Place in the freezer for at least 2 hours, then slice and drizzle over the chocolate. Sprinkle over the coconut if desired. Store in the freezer.
